Whoopie Pie by Gigi

In all of my baking I had never made a whoopie pie. I had heard of them and tasted them once, but they just hadn’t been on my radar.

Once in a meeting it was suggested we try whoopie pies and start testing them to put on our menu when we were in the height of the cupcake craze. That was honestly the extent of it. We were so busy with other things we just didn’t get to it.

Well the other night I was inspired to make whoopie pies so I started doing research before I found the perfect recipe.

Come to find out the whoopie pie is said to be created long ago and passed down through the generations by the Pennsylvania Dutch and the Amish settlers.

It’s left over cake batter with a creamy middle. The reason why it sticks together is because of the whipped eggs, crisco and warm water. They are made more like a sandwich made of 2 cake like cookies.

The Amish legend has it that when children and farmers would find the delicious treat in their lunch pail’s they’d yell out "Whoopie Pie"! Hence the name.

They are easy to travel with and portable. They are perfect for parties, festivals or weddings as a take home gift.

I just love how many recipes are passed down from generation to generation brought from all over the world and now has become a staple in the American kitchens and a tradition.  Like pizza, hotdogs, cake, doughnuts, croissants, etc…

All of these delicious foods have a past and a story.

After studying a few recipes here is my version of the Whoopie Pie.

It’s like a cake and cookie combo with a spongey texture.

The frosting is a bit more stiff than a regular buttercream because of the whipped egg whites and cream of tartar.

All in all they were fairly easy to make and pretty darn good.

This is a chocolate recipe, but you can make many flavors.

I might try a pumpkin cream recipe for the holidays and share it with y'all.

INGREDIENTS

4 cups of flour
1 cup cocoa (dark preferably)
2 cups sugar 
1 cup crisco
2 tsp baking soda 
1/2 tsp salt
2 tsp vanilla 
2 eggs
1 cup milk
1 cup warm water

DIRECTIONS

Preheat oven to 375*
 
  • In a large bowl, combine flour, salt, cocoa and baking soda. Mix and set aside 
  • In another bowl, combine the sugar, crisco and eggs. Beat on high for 2 minutes.
  • Mix dry ingredients with egg mixture and warm water and milk and beat at medium speed until speed for 2 minutes, then add vanilla and beat till blended.
  • Drop cookies in a rounded spoonful on a parchment paper lined pan then bake for 10 mins. 
  • Remove and let cool.
Filling Ingredients 

4 Tbs flour 
4 tbs milk 
2 egg whites
1 1/2 cups of crisco
2 tsp vanilla 
4 cups of powdered sugar 
1/4 tsp cream of tartar 

Filling Directions
 
  • Beat egg whites and cream of tartar and beat on high till stiff and set aside.
  • Combine other ingredients then mix on high for 2 minutes. Fold in egg whites.
  • Spread generous amount on top of a cookie and then sandwich it with another one and viola a whoopie pie.
