Sand Dollar by Gigi


One of my most favorite places to go on vacation is Seaside Fl. It’s magical, peaceful, with beautiful sugar white sandy beaches and great restaurants. 

I have taken my daughter there on vacation and rented a house since she was 3 months old. It’s one of our traditions. 

One year while I was packing to go for another vacation there, I was asking God if when I get there and walk the beach I could find a sand dollar. Not a broken one - which there are tons of those scattered on the shore - but a whole sand dollar. I know that sounds like a small thing to pray and hope for, but I had always wanted to find one.

We unloaded our bags and headed for the beach.  There I was, walking in the water about waste deep when all of a sudden I walked on something. I reached down and not only did I find one, but I found hundreds of sand dollars! They were stacked up almost side by side vertically. That is how they grow. Who knew?

They were still alive because they were still gray. If a sand dollar is gray and not white then they are still alive and you shouldn’t take them out of their environment. I just stood there holding 100s of sand dollars in amazement knowing  I had found such a rare treasure .

God is into such detail. He let me experience live sand dollars. I slowly put them all back just happy I was able to experience that. It wasn’t about a sand dollar I realized. It was about how good God is and how much he loves the details of each of our lives. 

The next day as I walked the beach guess what I found? A small white whole sand dollar made just for me! It’s now in my office and every time I see it I am reminded that God cares about every detail and desire. He wants to show us his love and goodness everyday.

If you are open and respect timing and nature you never know what God has for you.
We think in our small minds that He just wants one certain thing for us, but in reality his storehouse is full of blessings he has stored up for you. All we need to do is:
Seek, Knock, Obey and Believe.

Tomato Spinach Frittata

INGREDIENTS
2 tablespoons olive oil, 1 garlic close - minced, One (6-ounce) package fresh baby spinach, One (10-ounce) can Ro*Tel tomatoes - drained, 1/4 teaspoon salt, 1/4 teaspoon black pepper, ONe (4.5-ounce) can sliced mushrooms, 12 large eggs - beaten, 1/2 cup crumble feta cheese, 1/2 cup shredded mozzarella cheese

DIRECTIONS
  • Preheat oven to 350F
  • Heat the oil in a 10-inch (2 inches deep) ovenproof, nonstick skillet over medium heat.
  • Add the garlic and saute for 1 minute, or until fragrant.
  • Stir in the spinach and cook for 1 minutes, or until the spinach begins to wilt.
  • Add the tomatoes, salt, and pepper, stirring frequently for 2 to 3 minutes
  • Add the mushrooms
  • Add the eggs and sprinkel with teh cheeses and stir
  • Cook for 3 to 5 minutes, gently lifting the edges of the frittata with a spatula and tilting the skillet so the uncooked portion flows underneath
  • Place the skillet in the over and bake for 12 to 15 minutes, or until golden brown
  • Remove from the oven adn let stand for 5 minutes
  • Slide the frittata onot a large platter and cut into 8 wedges.
